Friday is Pieday!!


 Hello friends and thanks for coming back for more pie. This week with Spring just around the corner, I wanted to present something refreshing and easy. With the days getting warmer I want to show you that you can create lovely pies without spending hours in the kitchen.  Our Pie today is Key Lime Pie and if you have never made one, you will be amazed at how quick and easy it is.
My pie is going to have a graham cracker crust...Ok..you can wipe the sweat off your brow..I'm not going to force you to make pie dough ;-) We are boarding the 'easy' train this week.
The ingredients for Key Lime Pie are:
The Crust-
1. 1 1/4 cups graham cracker crumbs
2. 1/4 cup granulated sugar
3. 5 TBL melted butter  (no margarine please..too much water)
The Filling-
1. 1 -14 oz can sweetened condensed milk
2. 3 egg yolks (save the whites for an omelet)
3. 1/2 cup Key Lime juice( appox 5-6 limes)...Key limes are not always available, so you can use regular limes or a very good bottled lime juice, such as Nellie & Joe's Famous Key Lime Juice (grocery stores). I beg you pleeeeeease never use the stuff in the little squeeze bottles, you know..the made from concentrate, full of preservatives stuff.  Yuck!
To make the crust, mix your graham & sugar & melted butter until all crumbs are moist.
Pour the crumbs into your 9 inch pie dish and using the back of a spoon, gently push the crumbs onto the bottom and up the sides...packing down as you go.

This is what your crust should look like...If you want super easy, buy a ready made graham crust..just don't tell me ;-)
                                      
In a medium size bowl, mix your egg yolks, condensed milk and lime juice with a whisk until smooth and well incorporated. 
                               
Pour the filling into your pie shell and bake at 350 degrees for 15 minutes. Yes that's right...only 15 minutes! 
                                      
Let your pie set for at least 10 minutes before putting it in the refrigerator . I'm sad that I have no pie crust cookies this week ;-(
                              
Once your pie is well chilled you can serve it with a dollop of fresh whipped cream and a pretty lime garnish. Again...pleeease no Cool Whip..have you read the label on that stuff...gross! Fresh whipped cream is so much lighter and better tasting and you can control the sweetness.
                            
Isn't she lovely? This pie is so creamy, light, tart and sweet all at the same time. You cannot beat it for ease of preparation with maximum results. You can make this recipe in small tartlette pans and serve individual Key Lime pies to dinner guest..talk about impressive! I hope you give this recipe a try, I know you will not be disappointed.

PS.....I have to laugh at all of you who read my last post about dolls. With all my references to the touching of boobs....only one of you mentioned it! I was chuckling all day about that and my husband said maybe you guys had a 'boob' filter on your blog reader...too funny.

I'm actually going to breakfast with my mom tomorrow, to a small, quaint tea place...and they have the best key lime curd for their scones. LOVE IT!!

I do think it's kind of weird about the boob touching but I want to know what was under the kilt?

Well your were a very inquisitive little girl and still are! Boobs ...you are to funny.
My little granddaughter saw her mother breast feed little brother and now she breast feeds her baby dolls and burps to. :0)

Key lime pie is my all time fave! I have that exact lime juice in my fridge from the key lime pie cupcakes I made over the summer :)

as long as they will crumble finely I think you would be ok ;-) I have used shortbread biscuits (cookies)

Janet, what a great blog! And, a beautiful pie! We were in Fla last spring for a wedding (we're from PA), and a relative told me about Nelly & Joe's--swore by it. So we scoured the supermarkets down there to stock up before heading up north, only to find that we could get it at our local store in PA. Go figure! But, the pies ARE easy (even making your own graham cracker crust :)) and guests are always impressed. And, Nelly & Joe's lasts longer in the fridge than the exp. date lets on. :) Thanks for sharing.

This is one pie that I've made (I do anything to avoid making pie crust.)It is my dad's favourite pie. Whenever I serve it, it is always enjoyed. Sometimes I've made it without the egg yolks and it turns out fine too.

I laughed when I read your post about all your gorgeous dolls. Like you, I was fascinated by my doll's anatomy.
